Oh, for the love of a Chemex brew...

How to Brew Coffee with a Chemex (30 g Recipe): Clean, Bright & Balanced

The Chemex coffee maker is both a brewing tool and a design classic. Known for its elegant glass shape and wooden collar, the Chemex is loved just as much for its looks as for the clean, crisp coffee it produces. Thanks to its thick paper filters, Chemex brewing removes oils and fines, highlighting clarity, brightness, and delicate flavor notes.

This 30 g Chemex brew recipe is ideal for sharing or for those who enjoy a slightly larger, café-style pour-over at home.

What You’ll Need for a 30 g Chemex Brew

  • Chemex brewer (6-cup or larger recommended)

  • Chemex paper filter

  • 30 g medium-coarse ground coffee

  • 480 g filtered water at 94°C

  • Gooseneck kettle

  • Digital scale

  • Timer

Brew ratio: 1:16

Step-by-Step: How to Brew 30 g of Coffee with a Chemex

Step 1: Prepare the Filter & Brewer

Place the Chemex paper filter into the brewer with the triple-folded side aligned with the spout. Rinse thoroughly with hot water to remove any paper taste and preheat the glass. Discard the rinse water.

Step 2: Add the Coffee

Add 30 g of freshly ground coffee to the filter. Gently shake the Chemex to level the coffee bed for even extraction.

Step 3: Bloom & Pour

Pour in controlled stages for optimal extraction:

Bloom (0:00–0:55)

  • Pour 60 g of water (twice the coffee weight)

  • Let bloom for 45–55 seconds to release trapped gases

Main Pours

  • 0:55–1:30: Slowly pour 90 g of water

  • 1:30–2:15: Add 200 g of water

  • Final pour: Add the remaining 130 g to reach 480 g total

Pour slowly and evenly, keeping the water level consistent without flooding the filter.

Step 4: Drawdown

Allow the coffee to fully drip through the filter. Total brew time should land between 3:30 and 4:15 minutes.

The Result: Elegant, Clean & Flavor-Forward Coffee

With 30 g of coffee, the Chemex delivers a bright, refined cup with excellent clarity, making it perfect for light to medium roasts. Expect subtle sweetness, gentle acidity, and a smooth finish—ideal for slow mornings or sharing with friends.

Pro Tips to Dial In Your Chemex Brew

  • Brew too slow? Use a slightly coarser grind

  • Brew too fast? Grind a touch finer

  • Coffee tastes sour? Extend the bloom by 10–15 seconds

  • Coffee tastes flat? Pour a little slower during the main extraction

Chemex brewing rewards precision—and that’s part of the experience.
